dump and run soup

i don't post recipe ideas because, well, i get sick of having to think so much about food...what to buy, when to buy it, how much to buy, what to fix on what nights...you may know what i mean.

but...this is something that i have to share...super quick. super easy. super cheap. and it's a fam fav, done in 20 minutes and it's nutritious. woot woot.


chicken tortilla soup

1 can diced tomotoes with green chilis
i can cooked chicken (or use leftover pieces of chicken)
1 box of chicken broth
1 clove garlic, crushed (or the easy route of 1 teaspoon crushed garlic)
1 cup prepared salsa
1 can black beans
and i often add a beer for flavor {but only if you can let stew on the stove top...don't get the kids saucy!}

dump it all in a stew pot and simmer for at least 20 minutes. scoop into bowls and chow down!

we like it best served with shredded cheddar cheese on top and crushed up tortilla chips.
super yummy!

Gosh, I see so many recipes for this and they all look so good. So my question is, why have I NOT made this yet? Arghh!!!! Sounds great. And I will take it with beer please!!!!!!!!!!!

My family loves chicken tortilla soup. My recipe is a little different than this, but yours sounds better. :) I love black beans, but never thought of throwing them in this soup. Yumm.

random acts...GNO

over at GNO, there's a few of us who decided to challenge ourselves last week to perform a random act of kindness.   i talked with my girls and hubs about what we could do... we reserve some funds each month out of our giving to put towards a current or urgent need that we find.  i think it's important to let the kids see how we give as family...and they should be part of that decision too . as we were talking, and eating chinese...come on, you know there would be eating...i open my fortune cookie.  and this is it!! i was out getting a few minutes of alone time and decided to pay hubs forward by getting jiffy lube to do the oil change.  while i was there, i remembered how hard it was being a single mom.  i remembered that the little things, like oil changes, suddenly became bigger things and honestly, more expensive things.  *light bulb!!!* thomas rang me up for my oil change and asked if they had any scheduled appointments that i could pay for.  he looked at me a little odd......
